Travel: Lulu’s Bakery & Cafe – San Antonio,TX -Home of the 3 Pound Cinnamon Roll!

When I decided to go to Texas to attend Fiesta Week; I knew I had to visit Lulu’s Bakery & Cafe. I’d never heard of Lulu’s until I watched an episode of Man vs. Food, where the host, Adam, was touring San Antonio. When I saw that 3 pound Cinnamon Roll… I knew I had to have one!   SONY DSCSONY DSCWhen I drove into the parking lot, I was a little surprised to see an … “older” looking building. No worries, some of my favorite places to eat are little hole-in-the-wall joints! I waited in the car for a bit, you see, I was meeting a sweet friend from high school… a friend I had not seen since graduation! After she arrived, and we hugged and dried our tears, we went into Lulu’s. I also had my cousin with me- we were ready to see what all the fuss was about! SONY DSC SONY DSCIf you like diners, you’ll love Lulu’s! I could tell there were a few regulars there… locals who knew the menu by heart. Lulu’s sells your typical American diner food, chicken fried steak, burgers, etc. But we were there for one thing & one thing only! When our waitress asked what we wanted to eat, the answer was simple, “I want the Cinnamon Roll, please!” I also ordered a glass of chocolate milk, because I’m a dairy freak! After placing our order, we sat back and enjoyed great conversation. Lulu’s is a fantastic place to reconnect with an old friend. Then, we saw it! It was a sight to behold! You know what they say, “Everything’s bigger in Texas!” That’s my cell phone, next to the Cinnamon Roll!SONY DSCSONY DSC We spent the first 5-10 minutes just looking at our roll in amazement! We could not get over how big it was, I’d never seen anything like it! It was a work of art (foodie art!), and I debated on whether or not to eat it. But it smelled So Good, I knew what needed to be done! Take a couple more pics before cutting into it! It was delicious! I was concerned that the flavor might not be there, because it was so big. One bite and I knew I had nothing to worry about. You see all that cinnamon? The flavor was on point, no complaints! We each ate a little of it, and then I had it wrapped up so I could take it with me. (What? Did you think I was gonna eat the whole thing?) I ate off of that roll for the next few days. Veggie Omelet Kikkoman Style! #KikkomanSabor

I love preparing big breakfasts on the weekend, it’s a tradition in our home. The kids know Mommy will be in the kitchen making their favorites every Saturday & Sunday, that’s how we roll. Some of the most requested meals are pancakes (I make all different kinds!), waffles, french toast, and omelets!

I enjoy making omelets because anything goes! You can add just about anything to an omelet, right?! Or is that just me?! Left over veggies from last night’s dinner, sure, throw ’em in! Leftover ham from the Thanksgiving meal the day before, into the pan you go! Kikkoman Soy Sauce that I usually only use for my Asian dishes, What?! Yep, you read that correctly, I add Kikkoman Soy Sauce to my veggie omelets… it helps “kikk” up the flavor!

High res logoYou wanna know how to make my Veggie Omelet? It’s real simple, there’s just 6 ingredients, here they are:

8 eggs – 1/2 onion, diced – 1/2 large tomato, diced – 10 oz pkg mushrooms, sliced – 1 cup shredded cheese (I used the Italian blend) – 2 Tablespoons Kikkoman Soy Sauce

1. First thing you want to do is sauté your onions & mushrooms in the pan. I used the Kikkoman Soy Sauce to sauté them, but you could use a little butter first & then add the sauce-it’s up to you.SONY DSC

2. Give the onions & mushrooms a few minutes to sauté, then add the well-beaten eggs to the pan. Eight eggs will be enough to feed a family of four.SONY DSC 3. After the eggs, toss in the tomatoes. Doesn’t that look good?!SONY DSC 4. Let everything cook for a few minutes and then add your cheese. SONY DSC Omelets don’t take very long to cook, cover it up and after about 5-10 minutes, it should be ready. You can salt & pepper to taste, but with the Kikkoman Soy Sauce-you really don’t need to add any salt. I like that Kikkoman offers a reduced sodium variety, that’s the one I used. Plentils- Crunchy Lentil Chips!

You guys remember a few months back, when I attended the FoodBuzz Bloggers Conference In San Francisco? One of the products I tried was made by Enjoy Life, and it’s called Not Nuts! Seed & Fruit Mix. It was fantastic! I knew I had to reach out to the company and tell them how much I enjoyed their product. I did, and guess what? They sent me one of their brand new products to share with all of you!

I am super excited to tell you about Plentils-Crunchy Lentil Chips! I know what you’re probably thinking, “Lentil chips, really?!” I’d like to say, “Yes, really!” But before I do, here’s a little more about Enjoy Life. Now, on to the goodies! I was sent all four flavors to try: Garlic & Parmesan, Light Sea Salt, Dill & Sour Cream, and Margherita Pizza. I was excited to sample these and ripped one of the bags right open, don’t worry I didn’t spill anything! First one I tried was the Margherita Pizza. I really did not know what to expect, as I have never had a Lentil Chip before. I liked it, I really did! They are very crunchy, and full of flavor; not to mention made from high protein lentils!  Hubby liked them too, and he’s super picky about what he eats! LOL! The real test was going to be my little one… would a five-year old like them? There’s only one way to find out. I offered him some from the bag, at first he hesitated. “What’s that?!” he asked. “It’s a new chip, it’s really good,” I answered. Nothing. I continued eating mine, he slowly reached into the bag and pulled one out. I didn’t say anything. He put it in his mouth… and didn’t spit it out! He likes it! Success! We are trying to eat healthier (No, I don’t sit around chomping on celery & carrots all day… I wish!) so I am glad he likes Plentils. I would much rather have him eat these than some of the other “chip” options out there.
